Yesterday, Jenny and I rode the Montauk Century (from Babylon to Montauk, Long Island) with David and Adriana. It was a great ride, and was also the first time my odometer ever went over 100 miles in a day! The only other century Jenny and I did, we went 100 exactly!

She's got a cold, too. But she's not as lucky as I am. My girl's found out about these nasal strips. I was sad and snotty and grimacing as I sniffled and sneezed. She called me a goldfish, as I'd open my mouth and try to clear my popping ears. Then she stuck a nasal strip on my nose, and it was wonderful! I can breathe again. And, no one's even paid me to blog this. This product recommendation actually comes from me!
So, Jenny is great even though:
We went to a library employee party tonight, and we all played this game where we all answered questions. One of the questions was in a perfect world, who's your perfect partner. So, I wrote, "my current partner is ideal." Jenny wrote, "Wolverine from X-Men."
But I forgive her because she brings me nasal strips.

We're (David, Adriana, Kate and Jenny) once again biking from Boston to Provincetown to raise money for The National Multiple Sclerosis Society. Please support our trip, and pledge online. I'm the team captain-- just search for my name--MA is the chapter state and NY is my state. The entire team divides up the donations later. The quest for a homemade vegan coconut cake as good as Veg-City Diner's begins! Having never really done much vegan baking before, I plan to document the process here...
Vegan Coconut Cake #1 (modified from here)
White Cake
Ingredients:
1 1/2 cups white pastry flour
1 cup sugar in the raw
1 tsp. baking soda
1/4 tsp. salt
1 cup water
1/3 cup canola oil
1 Tbsp. fresh lemon juice
1 Tbsp. vanilla
1/4 tsp. orange extract
Directions:
Preheat oven to 350 degrees F.
Mix or sift dry ingredients together in a large bowl. Measure in the wet ingredients, and stir with a fork until no lumps remain.
Pour into an 8" x 8" pan. No need to grease.
Bake for 35 minutes or until tests done.
This is usually served from the pan cut in squares. If you want to take it out of the pan, you'll have to grease and flour as it is a moist cake and wants to stick.
Serves: one 8" x 8" cake
Coconut Frosting
Ingredients:
1 c sugar in the raw
6 tbl corn starch
1 tbl fresh lemon juice
1 cup organic coconut shreds
1/4 tsp salt
2 tbl canola oil
1 c water
1/2 tsp vanilla
1/4 tsp orange extract
Directions:
Mix sugar, cornstarch, and salt in a medium sauce pan. Whisk in the water. Heat over medium until it gets thick and starts to boil. Boil for 1-2 minutes. (Make sure you don't boil too long, or it will set like taffy.) Remove from heat and stir in oil and vanilla and orange extract. Cool and spread on cooled cake. Enjoy! =>
Makes: enough frosting for 1 cake
Preparation time: 10 min.
Results:
This cake was a little too sweet for my taste and came out slightly more dense than I might have hoped. The cake and frosting were more of a beige than white color, perhaps because of the sugar in the raw, or the vanilla. Overall, though, the cake turned out pretty well for my first foray into vegan baking.
